    Instructions

    Preheat oven & prep: Preheat oven to 425˚F then line a baking sheet with parchment paper.

    Roast the cauliflower: Toss the cauliflower in olive oil then sprinkle with salt and pepper. Give it a good toss, then roast until fork tender (about 40-45 minutes).

    Blend the sauce: While the cauliflower is roasting, blend the sauce ingredients in a high-speed blender until smooth and creamy.

    Get the topping ready: In a small bowl, mix the ghee and nut crumbs together. Be sure that the ghee is softened and not melted which will help create the right consistency for the topping.

    Cut the cauliflower: Once roasted and slightly cooled, cut the cauliflower into bite-sized pieces.

    Ingredients
      

    • 2 Cauliflower large & cut into florets
    • 3 tablespoon Extra Virgin Olive Oil
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper
    • Sauce:
    • 2 cups Cashews, Raw soak in water for 2 hours & drain
    • 1 clove Garlic peeled & cut in half
    • 2 tablespoon Lemon Juice fresh
    • 1 teaspoon Salt
    • 1 cup Water
    • ½ cup Nutritional Yeast
    • Topping:
    • 1 cup Italian Nut Crumbs or 1 cup almond flour mixed with 1 tablespoon Italian seasoning
    • ¼ cup Ghee soft but not melted
