    Coleslaw with Avocado Lime Crema

    Jump to Recipe Print Recipe

This Avocado Lime Crema Coleslaw is Whole30 and dairy free and such a flavorful slaw for adding to shrimp tacos!  Of course it is perfect alongside anything grilled like a juicy burger, chicken, or steak!  The burst of lime adds a perfect tang that works well with the creaminess of the avocado.  If you love a creamy slaw this is the recipe for you! Don’t forget to check out my other Whole30 Coleslaw or Summer Slaw for some fun variations!

    Why You'll Love This Recipe

Crunchy and creamy: Using only the freshest ingredients, this slaw is crisp and the dressing is thick and creamy with the perfect kiss of tang. This coleslaw with avocado lime crema really stands out.

It pairs well with everything: From slathering it on a burger to filling up your tortilla for fish tacos, this slaw hits the spot with anything you want to have with it! We personally enjoy it by the spoonful right from the bowl!

    Ingredients You Will Need

Green cabbage: Green cabbage, also known as cannonball cabbage, is leafy, crunchy, cheap, and nutritious. It can be served raw or cooked in a number of ways and is especially good in coleslaw with avocado lime crema.

Purple cabbage: Whether you call it red or purple, this cabbage has a high concentration of antioxidants, which are proven to reduce oxidative stress. It can also be served raw or cooked. It is just so pretty and a favorite of mine for all sorts of salads.

Carrots: Carrots add a satisfying crunch, a touch of natural sweetness, and a beautiful vibrant color.

Avocado: Did you know that avocados are known as "alligator pears"? They have creamy smooth flesh and bumpy skin. Best known as the star ingredient in guacamole, they are versatile and can be prepared in an array of dishes or simply eaten with a spoon.

Lime: Using lime in this slaw adds a tangy citrus flavor that enhances the dish's overall taste and freshness. It also helps prevent your avocado from browning. This balance is vital for the taste profile of coleslaw with avocado lime crema.

Avocado oil mayonnaise: This mayo is made from avocado oil, unlike many common mayos crafted with other oils, and offers a unique creamy texture and a healthier fat profile.

Red Onion: Red onion adds a crunchy texture and bold flavor, elevating salads with its zesty kick.

Salt and Pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat, improving the overall flavor of a dish.

    Instructions

In a large bowl: Add shredded cabbage, carrots, and diced onion.

In a small bowl: Immersion blend the mayonnaise, avocado, lime juice, salt, and pepper till smooth.

Combine: Add mayo mixture to coleslaw and mix well.

    Enjoy!

    Recipe Tips and Tricks

Buy whole heads of cabbage: Not only is it cost-effective, but you can easily get 3-4 meals from the whole heads. This is especially handy when making coleslaw with avocado lime crema.

Buy carrot sticks: You can purchase pre-shredded/cut carrot sticks to use and save time making this slaw.

    Recipe Variations

Instead of cabbage: You can substitute equal amounts of pre-shredded broccoli slaw to save even more time.

Like your slaw tangier: Add a few tablespoons of apple cider vinegar.

    Storage Tips

To store the Coleslaw with Avocado Lime Crema, place it in an airtight container and refrigerate. It will stay fresh for up to 5 days.

FAQs About Coleslaw with Avocado Lime Crema

Why does my coleslaw taste bitter?

If you did not cut out all of the core, it can leave a bitter taste.

When should I add the dressing to my slaw?

It is best to add it just before serving for optimal crunch and creaminess. This applies to every type of coleslaw with avocado lime crema.

    Can you refrigerate coleslaw overnight?

You certainly can, but it does have the best flavor the day it's made. However, it keeps well for several days in the fridge.
