    Why You'll Love This Recipe

These chocolate almond butter bars are a win-win with only 6 ingredients and no refined sugar. Plus, you won't spend a minute baking—just mix, set, and enjoy the deliciousness!

    Ingredients You Will Need

Ingredients - including chopped pecans, almond flour, almond butter, maple syrup and organic coconut oil laid out together in small white bowls with a chocolate bar and coarse kosher flake salt in a bag.

Almond Meal/Flour: is typically finer and made from blanched almonds, while almond meal is coarser and often includes almond skins in its preparation.

Almond Butter: in a no bake bar contributes a smooth and creamy texture, while adding a slightly nutty yet mild flavor. Its natural oils help create a cohesive and firm texture when chilled. I like Georgia Grinders almond butter and you can use Pennysprimal to save 15%.

Pure Maple Syrup: lends natural sweetness to these bars without the addition of more highly processed refined sugars.

Pecans: contribute a rich, nutty flavor and adds a pleasant crunch to the base layer of the bars.

Organic Coconut Oil: acts as a binding agent and provides some moisture to the base, while adding a slight coconut flavor.

Dark Chocolate Chips: complements the richness of the nut butter mixture for a nice contrast to the sweet and salty nature of these bars. I typically reach for dark chocolate that is sugar and dairy-free.

Kosher Flaky Salt: is often used as a finishing touch to bring out the flavors (especially when paired with chocolate) and adds a delicate crunch.

    Instructions

Make the base: combine nut butter, maple syrup, pecans and coconut oil in a food processor until crumbly.

Add the flour: and the nut butter mixture, using your hands to knead everything together.

Transfer to a pan: by pressing the mixture into an 8 x 8 pan for thinner bars, or a 5 x 8 pan if you'd like them a little thicker.

Freeze to set the base: the first layer for 5-10 minutes.

Melt the chocolate: in the microwave or over a double boiler.

Pour the chocolate on top: of the base from the freezer and pour the melted chocolate over it. Using a spatula, spread the chocolate evenly to ensure full coverage. Add a sprinkle of flaky salt across the top.

Final freeze: the bars for another 10-15 minutes until the chocolate hardens.

Cut into squares: of your desired size.

Enjoy chilled! as these bars are best kept refrigerated or frozen.

A food processor filled with blended nut butter, maple syrup, pecans and coconut oil to make a crumbly base.
The nut butter base is added to a bowl in preparation of kneading the ingredients together. There is a smaller white bowl of chocolate squares included too.
Using hands to press the base of the bars into an 8x8 glass pan with a small white bowl of chocolate squares to the side.
The bars are in an 8x8 glass dish with the chocolate layer on top getting a sprinkle of coarse flake salt before the bars are cut.

    Recipe Tips and Tricks

Check the Consistency: When combining the ingredients for your base in a food processor, periodically check the mixture's consistency. It should stick together when pressed between your fingers. If it's too dry, you can add a bit more almond butter or a little splash of coconut oil to bring more moisture into the mix and to help it bind better.

Layering Technique: Press the base layer firmly into the pan and ensure its evenness using a spatula. Also evenly spreading the chocolate on top will give the bars a consistent appearance and texture.

    Recipe Variations

Switch up the nut butter: If you prefer other varieties of nut butter like cashew or peanut, you can incorporate those instead of almond butter.

Get creative: If you love shredded coconut, sprinkle some on top of the chocolate before it sets. You could also add a layer of caramel under the chocolate for an extra touch of indulgence.

    Storage Tips

You can store these bars in the fridge for up to 2 weeks or in the freezer for up to 6 months (if you manage not to eat them all immediately!)
