Apple Walnut Chicken Salad

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Its no secret I love chicken salad and this Apple Walnut Chicken Salad is another of my favorites. There is just something so delicious about crunchy apples, good for you walnuts and tangy dried blueberries all in one bite that is just so satisfying! I remember watching my Grandma count out 10 walnuts every morning and saying how good for you they are so I try to incorporate them into my diet every day! This Apple Walnut Chicken Salad makes enough for lunches for the whole week!


INGREDIENTS
2 large chicken breasts, roasted and chopped, I like Butcher Box
1/4 cup red onion, diced
1 large granny smith apple, diced
1/2 cup walnuts, chopped
1/2 cup dried blueberries, unsweetened
1/2 cup mayonnaise
1 tsp salt
1/2 tsp pepper
1 tsp thyme

DIRECTIONS

In a small bowl mix mayo, salt, pepper and thyme.

In a large bowl add chicken, apples, walnuts and red onion.

Add mayo and mix well.

Add blueberries and gently toss with a rubber spatula.
