Bacon Meatloaf

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

This is not your mother’s meatloaf and I promise it will become a staple in your home on and off Whole30 because it’s that good! It’s got delicious bacon laced throughout and is just so full of flavor! I have been sharing this recipe since last May on instagram and I cannot tell you how many messages I’ve gotten saying “it’s the best meatloaf I’ve ever eaten” or “my kids who don’t like meatloaf devoured this”. You have to trust me and try it and I promise you will never want meatloaf any other way again.



INGREDIENTS
1 lb ground beef, I use Greensbury Market
1/2 cup Italian Nut Crumbs (or 1/2 cup almond flour, 1 tbsp Italian seasoning)
1 egg, whisked
1/4 cup onion, diced
1/4 cup ketchup plus
2 tbsp for top, I use The anew Primal (link)
6 slices bacon, precooked and chopped
1/4 cup fresh parsley, chopped

DIRECTIONS

Preheat oven to 350
Combine in a bowl, egg, onion, crumbs, ketchup, bacon, salt, pepper and parsley. Stir well.
Add ground beef and mix well.
Form into shape and move to casserole or loaf pan.
Top with 2 tbsp of ketchup.
Bake 45 minutes.
