Cauliflower "Mac & Cheese"

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Would you ever think you could enjoy a mac and cheese that is completely dairy free? This Cauliflower "Mac & Cheese" is that dish! No one believed me when they asked what kind of cheese I used and I said none! It has the perfect "pasta" texture from roasting the cauliflower and is creamy and gooey just like the real deal! I can’t wait for you to try this one!






INGREDIENTS

2 large heads cauliflower, cut into florets
3 tbls olive oil
1 tsp salt
1 tsp pepper
SAUCE:
2 cups raw cashews, soak in water for 2 hours & drain
1 large clove garlic, peeled & cut in half
2 tbsp fresh lemon juice
1 tsp salt
1 cup water
1/2 cup nutritional yeast
TOPPING:
1 cup Italian nut crumbs, I like Nut Crumbs
(or 1 cup almond flour mixed with 1 tbsp Italian seasoning)
1/4 cup ghee, soft but not melted, I like Fourth & Heart

DIRECTIONS

Preheat oven to 425˚ & line a pan with parchment paper
Toss cauliflower in oil & sprinkle with salt & pepper
Roast till fork tender (about 40-45 minutes)
Meanwhile blend sauce ingredients in high speed blender till smooth & creamy
In a small bowl mix ghee with nut crumbs
Cut cauliflower into bite size pieces
Put into a casserole dish and pour sauce over & stir well
Sprinkle nut crumbs on top
Cover with foil & bake in a 350˚ oven for 20 minutes
Remove foil & bake 10 minutes more
