Chicken Fajita Stuffed Potatoes are just what you need for your Taco Tuesday or any day of the week! They are bursting with all your favorite fajita flavors and it comes together quickly too! Be sure to try out my Everything Sauce which is the perfect drizzle for the top of these potatoes!
INGREDIENTS
4-6 Russet potatoes, roasted
1 lb ground chicken, I like Greensbury Market
3 tbsp fajita spice
3 bell peppers, seeded & sliced
1 large onion, sliced
1 tbsp avocado oil
1/2 bunch cilantro, chopped
limes for garnish

DIRECTIONS

In large saute pan heat oil
Add peppers and onions & saute till tender, move to plate
Add chicken & spice & cook till no longer pink
Add peppers & onions back to pan, stirring to combine
Add cilantro & stir in
Spoon mixture over hot baked potatoes
Garnish with limes & more cilantro if desired
