You are going to love this flavorful Chipotle Beef Soup that can be made with left over roast beef or beef of choice! You could even use shredded chicken. To make this even easier I used Kettle & Fire Chipotle Beef Bone Broth but don’t worry you can use regular beef broth and chipotle spice if you can’t wait to make it. This is such a fantastic way to use up leftover and create a healthy hearty soup!
INGREDIENTS
1.5 lb Roast beef cut in bite size pieces
(or other beef)
2-3 potatoes, peeled & cubed
2 tbsp olive oil
3 large carrots, sliced
3 ribs celery, diced
1 cup onion, diced
2 cups tomato sauce
5 oz baby kale
6 cups Chipotle beef bone broth, I like Kettle & Fire
(or beef broth + 2 tbsp chipotle spice)
1 tsp salt
1 tsp garlic powder
1 tsp cumin

DIRECTIONS

Heat oil
Add onions & celery & cook till onions are translucent
Add carrots, tomato sauce, beef broth
Bring to a boil about 5 minutes
Add potatoes & beef & bring back to a boil & lower heat & simmer 15 minutes
Add spice (+ chipotle spice if using)
Add kale, stir till wilted
