Copycat Popeye's Chicken

Confession....having never had Popeye's Chicken I decided to try and create the recipe as David had been asking for months for me to try. So if you try this recipe I am not sure it tastes like Popeye's but I will say this chicken is the bomb! It's spicy and crunchy coating with tender juicy meat is something to sink your teeth in to. We are spice wimps here so you can turn up the heat by using Louisiana hot sauce and increasing the cayenne. This dish can be air fried as well


INGREDIENTS
3-4 lbs chicken pieces, bone and skin on, I like Butcher Box
12 oz dairy free yogurt, unsweetened
3 eggs, whisked in a large bowl with 1/4 cup water
1 cup buffalo sauce, I like The New Primal
1 cup almond flour
1 cup cassava flour
1 cup tapioca flour
1/2 cup arrowroot powder
1 tsp salt
1 tsp pepper
1 tsp cayenne (more if like heat)
2 tsp onion powder
2 tsp garlic powder
1 tsp mustard powder
Spray oil

DIRECTIONS

Place chicken pieces in a large bowl.
Add yogurt, stir, cover and refrigerate 2 hours.
Line a baking sheet with foil and use baking racks.
Spray racks well with oil.
Preheat oven to 375.
Mix in a large bowl, flours, arrowroot and all spice.
Mix in another bowl, egg mix and buffalo sauce.
Let excess yogurt drip off chicken,
dip in flour mix, then in egg mix and in flour mix again.
Place on rack trying not to touch other pieces.
Spray pieces well with oil.
Bake for one hour or till cooked through. Should reach 165 temp.
You may need to spray again half way through.
