This Copycat Popeye's Chicken was created especially for David. He had been asking for months if I would make it just because it looked so good on the commercial! Having never had Popeye's chicken I'm not sure if it tastes like it but I will say this chicken is the bomb! It's spicy and crunchy coating with the juiciest, tender meat is something to sink your teeth in to! We are spice wimps over here so feel free to kick the heat up by using Louisiana hot sauce and increasing the cayenne. The family will be begging you to make this over and over!

3-4 lb chicken pieces, bone & skin on,
I used a whole chicken from Greensbury Market
12 oz yogurt, dairy free & unsweetened
3 eggs, beaten in a large bowl with 1/4 cup water
1 cup buffalo sauce, medium, I like The New Primal
1 cup cassava flour
1 cup tapioca flour
1/2 cup arrowroot powder
1 tsp salt
1 tsp pepper
1 tsp cayenne, or more if you like heat
2 tsp onion powder
2 tsp garlic powder
1 tsp dried mustard
oil spray
