Cranberry Apple Caulirice Stuffing

Would you believe you can enjoy stuffing that is completely grain free? This Cranberry Apple Caulirice Stuffing is bursting with flavor from tangy cranberries, tart apples, delicious nut crumbs and savory spice. It's so delicious we eat it all year round as its the perfect side for roasted chicken!





INGREDIENTS
2- 12 oz bags frozen cauliflower rice
3 ribs celery, diced
1 cup onion, diced
3 cloves garlic, minced
2 tbsp ghee, I like Fourth & Heart
1 1/2 - 2 cups chicken broth or bone broth, I like Kettle & Fire
1 cup original nut crumbs, I like Nut Crumbs
(or 1 cup pecan flour)
1 cup pork panko crumbs
1 cup dried cranberries, unsweetened
1 large apple, cored & diced
6-8 fresh sage leaves, for garnish, optional
2 heaping tsp Oomph Herby Duxelles, I like Oomph

DIRECTIONS

Melt ghee in a large skillet
Add celery & onion & cook till onions are translucent
Add garlic, salt, pepper & Oomph
stirring one minute
Add cauliflower rice, broth & apple
Simmer 5-7 minutes
Stir in nut crumbs, panko & more broth if needed
Stir in cranberries
Garnish with sage leaves
