Cranberry Apple Caulirice "Stuffing"

Would you believe you can enjoy stuffing that is completely grain free? This Cranberry Apple Caulirice Stuffing is bursting with flavor from tangy cranberries, tart apples, delicious nut crumbs and savory spice. It's so delicious we eat it all year round as its the perfect side for roasted chicken!









INGREDIENTS

24 oz Cauliflower Rice, frozen
3 ribs celery, diced
1 cup onion, diced
3 cloves garlic, minced
2 tbsp ghee, I like Fourth & Heart
1 1/2 cups chicken bone broth, I like Kettle & Fire
1 cup Italian Nut Crumbs, or pecan flour
1 cup Panko Bread Crumbs
1 cup dried cranberries, unsweetened
1 Pink Lady apple, cored & diced (can use Granny Smith)
6-8 whole sage leaves, fresh for garnish
2 tsp Oomph Cooking Blends, Shiitake Umami Mix, heaping tsp
1 tsp salt
1/2 tsp pepper

DIRECTIONS

Melt ghee in a large skillet
Add celery & onion cooking till onions are translucent
Add garlic, salt, pepper & Oomph, stirring one minute
Add cauliflower rice, broth & apple
Simmer 5-7 minutes
Stir in nut crumbs, panko and more broth if needed
Stir in cranberries
Garnish with sage leaves
