Creamy Cauliflower Mash

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

I do believe you could pass this Creamy Cauliflower Mash off as mashed potatoes because it's that good! Just saying! They are so creamy and the perfect dish to enjoy without the added carbs.










INGREDIENTS

1 large head cauliflower, cut into florets, can use stems too
4 tbsp ghee, I like Fourth & Heart
4 tbsp non dairy cream cheese, I like Kite Hill
2 tbsp almond milk, or a little more to desired texture
1/2 tsp salt
1/4 tsp pepper
1/4 cup fresh chives, chopped

DIRECTIONS


Boil cauliflower till tender, drain and cool till you can safely handle
Pour cauliflower into a straining bag for squeezing out the liquid (do not skip this step)
Return to pot and add remaining ingredients except chives
Turn heat to medium low
Immersion blend or use a hand mixer till smooth
Fold in chives
