Another one pan winner winner chicken dinner! This Creamy Mushroom & Bacon Chicken is so delicious and so easy too! whats not to love, chicken, bacon, mushrooms and spinach all in a dreamy sauce. You can serve it with mashed potatoes or cauliflower rice to soak up all the yummy sauce. Your whole family will love it!
INGREDIENTS
6-8 chicken thighs boneless & skinless, I like Rastelli's
1 cup onion, diced
4 cloves garlic, minced
8 oz bacon, cut in 1" pieces
8 oz baby bella mushrooms, sliced
5 oz baby spinach
24 oz beef broth or bone broth
1/2 cup coconut cream, hard white part
2 tbsp balsamic vinegar
1/2 bunch fresh parsley, chopped
1 tsp thyme
1 tsp paprika
1 tsp salt
1 tsp pepper
1 tbsp arrowroot mixed with 1 tbsp water, slurry, if needed

DIRECTIONS

Cook bacon in a large skillet till crisp, move to plate lined with paper towels, do not drain fat
Mix spice in bowl & divide in half
Toss chicken with half the spice
On medium high heat cook chicken 5-7 minutes per side, move to plate & cover with foil
Add onions & sauté 3 minutes
Add mushrooms, cook till browning
Add garlic, stir one minute
Add broth & bring to a boil
Lower heat to medium
Add coconut cream & stir well
Add chicken back to pan
Add balsamic & remaining spice, stir & simmer 10 minutes
If not thick enough add arrowroot
slurry
Add spinach & stir till wilted
Add bacon crumbles & parsley
