Creamy Radish & Cucumber Salad

Crunchy radishes and Persian cucumbers in the most delicious creamy sour cream and fresh herb dressing is the perfect summer salad! It is refreshing and comes together quickly making it the perfect side dish. I especially love this salad when the radishes and cucumbers are fresh from the garden (or your neighbor's who so generously shares)!






INGREDIENTS

2 bunches radishes, cleaned and sliced thin
4-5 Persian cucumbers, sliced thin
1/2 cup dairy free sour cream
1/4 cup chives, fresh, chopped
1/4 cup dill, fresh, chopped
1 tsp salt
1/2 tsp pepper

DIRECTIONS


Combine in a small bowl, sour cream, chives, dill, salt and pepper, mixing well

NOTE: If you are not going to enjoy this salad right after making it, you should sweat your cucumbers by laying them on paper towels and sprinkle with salt. Let sit for and hour or so.

In a large bowl add cucumbers, radishes and sour cream mixture tossing well with a rubber spatula
