Bet you never thought you could whip up the most delicious Creole soup in 30 minutes! You have to try this Creole Shrimp & Sausage Soup. It is just bursting with flavors! Tender shrimp, chicken apple sausage, kale and cauliflower rice in the most incredible broth giving it that creole flare. David had two huge bowls and wanted to know when I was making it again!
INGREDIENTS
1 lb shrimp, shelled and deveined, I like Greensbury Market
4 chicken sausages, sliced
9 oz jar Mesa de Vida creole sauce
12 oz bag frozen cauliflower rice
5 oz fresh baby kale
1 cup onion, diced
1 bell pepper, diced
2 tbsp ghee, I like Fourth & Heart
1 can coconut cream
4 cups chicken broth, I like Kettle & Fire
1tsp salt, or more to taste

DIRECTIONS

Heat ghee in a 5 quart pot
Add onion & pepper, cooking till onions are translucent
Add broth & creole sauce
Bring to a boil, then lower to a slow boil
Add sausage & cauliflower rice & simmer 5 minutes
Add kale, stirring till wilted
Add coconut cream & salt to taste
Stir well to combine & heat through
Add shrimp & simmer 5 minutes
