This Crispy Orange Chicken & Snow Peas is better than take out! The chicken gets crispy and then tossed in the most delicious sauce with the snap from the snow peas and carrot sticks for the perfect dish! We like to serve it over cauliflower rice keeping it Whole30 but this would be delicious over rice or even noodles!

INGREDIENTS
1 1/2 lb chicken thighs, cut in pieces, I like Greensbury Market
1/2 cup arrowroot powder
1/2 cup cassava flour or tapicoa
1 tsp salt
1/2 cup orange juice, unsweetened
5 green onions, sliced, reserving some green slices for garnish
avocado oil for cooking
1 cup carrot sticks
1 lb snow peas
SAUCE:
1/2 cup orange juice, unsweetened
1/4 cup chicken broth, I like Kettle & Fire
1/4 cup coconut aminos
1 tbsp fresh ginger, minced
1 clove garlic, minced
1 tbsp sesame oil
2 tsp arrowroot powder

DIRECTIONS

Combine in a large bowl, arrowroot, cassava, salt & orange juice & whisk well (it will be thick)
Add chicken & stir to coat, set aside
Add oil to pan, a bit more than coated
Add chicken pieces not touching, cooking till golden brown, flip and cook other side
Move to a plate lined with paper towels
Drain all but 2 tbsp of oil
Add onions & carrots stirring till onion are translucent
Add chicken back to pan
Combine all sauce ingredients in a bowl whisking to combine
Add sauce to pan, stirring well to coat chicken
Add snow peas, stirring in & cook
4-5 minutes
Garnish with green onions
