Curry Chicken Salad

I love chicken salads and this Curry Chicken Salad is bursting with flavor from the curry and hint of ginger but when the raisins join the party..... WOW! if you love curry then you will love this salad. I also have at least a dozen other chicken salad recipes for you to enjoy so you can’t possibly ever get bored!












INGREDIENTS
4 cups cooked chicken, cubed, I like Butcher Box
4 ribs celery, diced
1 small onion, diced
1/2 cup raisins, must be unsweetened for Whole30
3/4 cup mayonnaise
1 small lime, juiced
2 tblsp curry
1/2 tsp ground ginger
1 tsp salt
2 tblsp fresh cilantro, chopped

DIRECTIONS

Combine in a small bowl, mayo, curry, ginger, salt, cilantro and lime juice mixing well.


In a large bowl combine chicken, celery, onions and raisins.


Stir in dressing and toss well.
