This French Style Potato Salad is something my grandma used to make when I was little. It's made without mayonnaise and full of delicious fresh herbs. Traditional French potato salad has cornichons (tiny gherkin pickles) but my grandmother did not put them in so I do not either but you do you! Either way this potato salad is delicious served slightly warm or room temperature. It never lasts long in our house!
INGREDIENTS
3 lbs mixed color baby whole potatoes, boiled
till tender, drain, cut in 1/4's
1 shallot, peeled & diced small
1/4 cup chicken broth, I like Kettle & Fire
1/4 cup olive oilI
1/4 cup champagne vinegar (or white wine vinegar)
1 tbsp Dijon mustard
1/4 cup fresh parsley
1/4 cup fresh chives
1/4 cup fresh dill
2 tsp salt
1/2 tsp pepper

DIRECTIONS

Place all of the herbs in a food processor & chop till fine but don't over process
Put warm potatoes in a large bowl
Add herbs & shallot mixing with a rubber spatula
In a small bowl, whisk together broth, oil, vinegar, Dijon, salt & pepper
Pour over potatoes & mix gently
Serve warm or cold
Excess liquid will absorb into salad
