Grilled Mango Chicken Thighs

What could be better than sweet and sticky and finger licking good grilled mango chicken thighs? These thighs are marinated over night in the most delicious mango marinade for the best flavor and then take 15 minutes to grill and they are on the table! I have made these several times already and David eats 3 thighs every single time! I love to make one of my coleslaw recipes to serve on the side. I have several to choose from! Your whole family is going to love these and the best part....if you are lucky enough to have leftovers they are amazing sliced up and put on a salad for lunch the next day!



INGREDIENTS

8 chicken thighs, I like Rastelli's Delivered
3 cloves garlic, peeled
2 tsp ginger, fresh, minced
2 mangos, peeled and diced
1/4 cup coconut aminos
1/4 cup ketchup, I like Noble Made
1 tsp Korean chili flakes
1 tsp salt
1/2 tsp pepper
1/4 cup Cilantro, chopped for garnish
2 limes, cut in wedges for garnish

DIRECTIONS


Combine in a blender, mangos, coconut aminos, ketchup, garlic, ginger, salt, pepper & chili flakes till smooth

Place chicken thighs in a zip lock bag and pour marinade over and marinate over night for best flavor

Heat grill to 400 degrees

Cook chicken 5-7 minutes per side or till thickest part reaches 165˚ on a thermometer

Plate with fresh mango slices or Mango Salsa

Garnish with chopped cilantro & lime wedges if desired
