Do you love Gyro's? I love all the flavors and wanted to see how it would be with chicken so I created this Gyro Chicken Salad and is it ever delicious! Juicy, roasted chicken is combined with sweet grape tomatoes, crisp English cucumber, tangy Kalamata olives and the best dressing. Enjoy this salad over a bed of fresh greens with some extra gyro dressing!
INGREDIENTS
2 lb chicken breast, boneless, I like Butcher Box
1 cup English cucumber, diced
1/4 cup red onion, diced
1 cup grape tomatoes, 1/4rd
1/2 cup Kalamata olives, cut in half
1/4 cup mayo
1/4 cup gyro dressing, recipe below
1 tsp salt
1/2 tsp pepper
1 tblsp gyro spice plus more for dressing, I used Primal Palate
DRESSING
1 cup dairy free yogurt, unsweetened
1/2 cup English cucumber, peeled and diced
1 tsp gyro spice
2 tblsp fresh dill
1/2 tsp salt
1/2 lemon, juiced (about 1 tblsp)

DIRECTIONS

Preheat oven to 350
Drizzle olive oil on chicken and sprinkle 1 tblsp of gyro spice.
Roast 45 minutes, cool and dice.
Meanwhile combine in a blender all dressing ingredients and blend well.
Combine chicken, cucumbers, tomatoes, olives and onion in a bowl and toss with a rubber spatula.
Mix mayo with 1/4 cup of the dressing, salt and pepper and add to chicken salad and toss well.
Save extra dressing for salads!
