Ham & No Bean Soup

This Ham & No Bean Soup idea came from a soup I used to make that had 12 different beans in it and was full of spice. I tried a few times to recreate it and it was always missing something. Now I finally nailed it using Mesa De Vida Caribbean Recipe Starter! It added the right amount of spicy goodness I was looking for. The diced sweet potatoes actually have the consistency of beans. This makes a nice large potful and you will have plenty to freeze for another time!






INGREDIENTS
1 1/2 lbs ham, cubed
2 tbsp ghee, I like Fourth & Heart
1 onion, diced
4 ribs celery, 2 diced, 2 sliced
4 large carrots, sliced
2 large sweet potatoes, diced small
2 quarts chicken bone broth, I like Kettle & Fire
14.5 oz fire roasted diced tomatoes
9 oz Mesa De Vida Caribbean sauce

DIRECTIONS

Melt ghee in a large pot
Add onions & diced celery, saute till onions are translucent
Add potatoes, carrots & celery slices
Add broth
Bring to a boil
Lower heat to simmering, cover & cook ten minutes
Add ham & Mesa De Vida Caribbean sauce
Simmer 10 minutes more
