These Hasselback Potatoes are "buttery" with crispy outsides and soft creamy insides. The most elegant side dish that is easy and delicious. I highly recommend the fresh parsley for garnish as its so good with the buttery goodness of these potatoes!
6-8 potatoes, scrubbed and sliced thin but not all the way through
1/4 cup ghee, melted, I like Fourth and Heart
1/4 cup avocado oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1 tsp salt
1/4 cup fresh parsley, chopped

Preheat oven to 450 degrees
Line a sheet pan with parchment paper
Lay sliced potatoes on pan
Stir melted ghee, oil and spices in a bowl
Roast for 60 minutes
Sprinkle with parsley
*TIP* I use two 8" wood dowels
for cutting the potatoes. It prevents the knife from going all the way through!
