Hearty Chicken Stew

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Okay slow cooker fans! You have been asking me for more slow cooker recipes so here you go! This Hearty Chicken Stew is a hug in a bowl. My Mom used to make a pressure cooker chicken stew and my version takes me right back to my childhood favorite! The creamy chicken broth makes the best sauce for smashing those potatoes in. Run now and get that slow cooker out!






INGREDIENTS

2 lbs chicken thighs, boneless, cut in large pieces
1 large onion, cut in 1/2" wedges
3 cloves garlic, peeled & left whole
1 bay leaf
1 tsp salt
1/2 tsp pepper
1 tsp thyme
4 large carrots, peeled & cut in 2" pieces on the bias
3 ribs celery, cut in 1" pieces
1 1/2 lbs baby whole potatoes, left whole
8 oz mushrooms, cut in 1/4 if large
8 oz fresh green beans
2 cups chicken broth, I like Kettle & Fire
1 cup coconut cream
1 tbsp grainy Dijon, I like Noble Made
1 tbsp red wine vinegar
2 tbsp arrowroot powder

DIRECTIONS


Layer in slow cooker, onions, chicken, spice and bay leaf, carrots, celery, potatoes
Pour broth and vinegar over
Cover and cook on low for 4 hours
Add mushrooms and green beans
Cover and cook 1 more hour
Add coconut cream mixed with mustard and arrowroot, stir to combine
Cover and cook 1 more hour
Remove bay leaf
