Herby Plantain Croutons

Crispy, crunchy croutons on top of a fresh salad is the best! These Plantain Croutons are super easy made in the air fryer and hard not to gobble up before they get on the salad! Just 4 ingredients and 15 minutes to air fry and they are ready! If you are lucky enough to have leftovers, they keep well in a glass jar for several days!






INGREDIENTS

2 plantains, not overly ripe
1 tbsp avocado oil
1 tsp herb garden spice, I like Primal Palate
(or 1/4 tsp garlic powder/1/4 tsp onion powder & 1/4 tsp dried parsley)
1 tsp kosher salt, I like Primal Palate

DIRECTIONS

Peel & cut plantains into small cubes
Toss in a bowl with oil
Add spice and salt & toss again
Place in air fryer set to 350˚
Cook 10-15 minutes shaking every 5 minutes
Cook till desired crispness
