If you are from New York City you know all about Hot Dog Onions or Red Onions as they are also called. David was born in Manhattan and grew up as a young boy enjoying "dirty water hot dogs" with red onions from carts on the streets of the city. He asked me to make them Whole30 style and I was happy to oblige. These onions are sweet and spicy and the perfect topping not only on hot dogs but on burgers and chicken and even steak!
INGREDIENTS
3 lbs yellow onions, sliced 1/4" thick
5 cloves garlic, minced
5 large dates, pureed
3/4 cup ketchup, I like The New Primal
1/4 tsp cayene
1 tbsp smoked paprika
1 tsp salt
1/4 cup red wine vinegar
3 tbsp olive oil

DIRECTIONS

Heat oil in a large pot
Add onions and saute till soft
Add garlic, stirring one minute
Add ketchup, date puree and spice
Simmer on low 15 minutes covered
Add vinegar and simmer on medium low for 30 minutes uncovered
