Latin Chicken Sauté

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Everyone loves a one pan meal and even more so when it has less than 10 ingredients! This Latin Chicken Sauté is that dish! Why? Mesa de Vida did the work for us with their delicious sauce. This dish is bursting with flavor and loaded with veggies too. Lets just say David went back for a full second helping which is unusual for him and always my best sign its a winner winner chicken dinner!





INGREDIENTS

6-8 chicken thighs, boneless & skinless cut in bite size pieces
I like Rastelli's
8.5 ox Mesa de Vida Latin Sauce
1 cup mixed olives
1 cup onion, chopped
10 oz mushrooms, 1/4rd
3 large potatoes, peeled & cubed
3 tbsp ghee, I like Fourth & Heart
1 tsp salt
1/2 tsp pepper

DIRECTIONS

Melt ghee in a large pan

Add chicken, salt & pepper

Brown 5 minutes each side & move to a plate

Add onion, potatoes & mushrooms to pan

Cover & cook till potatoes begin to soften, stirring frequently

Return chicken to pan

Add olives & Latin Sauce

Simmer 20 minutes on medium low heat
