You can make this Lemon Basil Grilled Chicken with or without the Balsamic Strawberries but I highly recommend you don’t skip them because this combination is incredibly delicious. The chicken is so flavorful from the marinade and the strawberries add a burst of tangy sweetness that completes this dish. I like to serve it over fresh arugula and pile on extra strawberries because why not!
INGREDIENTS
1.5 lbs chicken breast or thighs, boneless, I like Rastelli's
1/4 cup olive oil
1/4 cup lemon juice, fresh squeezed
3 cloves garlic, minced
1/2 cup basil, fresh, chopped
1 tsp salt
1/2 tsp pepper
BALSAMIC STRAWBERRIES:
4 cups strawberries, diced
1/4 cup balsamic vinegar
1/4 cup basil, fresh, chopped
1 tsp salt
1/2 tsp pepper
1 tbsp date syrup (or 3 dates puréed - whole30)

DIRECTIONS

Cut chicken breast in half lengthwise if thick
Place in zip lock bag
Whisk together oil, lemon juice, garlic, salt & pepper
Pour over chicken
Zip bag closed squeezing out air
Massage chicken well
Refrigerate 3 hours or over night
Meanwhile combine all of the Balsamic Strawberries ingredients in a bowl and mix well
Heat grill
Cook chicken 4-6 minutes per side depending how thick they are or till thickest part reaches 165˚
Remove from grill, cover with foil and let rest for 5 minutes
Spoon strawberries over
