I love fruit in salads and I feel like nectarines don't shine as much as they should! There is nothing better than a big sweet, juicy nectarine and this Nectarine & Arugula Salad will prove me right! This dish is so colorful and with the added goat cheese it has the perfect amount of tang to balance the sweetness from the fruit. Simple, fresh ingredients topped with your favorite vinaigrette is the perfect summer dish!
INGREDIENTS
3 oz arugula or more depending how large a salad you want
1 pint cherry tomatoes, cut in half
2 pickling cucumbers, sliced in half moons
(I like pickling cucumbers for their crunch but any will do)
2 large nectarines, sliced in thin wedges
1 small red onion, peeled & cut in thin rings
1/4 cup fresh basil leaves, chopped if large
2 oz goat cheese, crumbled
fresh ground black pepper

DIRECTIONS

Divide the arugula into 4 serving bowls
Top with all other ingredients divided evenly
We love a nice vinaigrette over this salad which allows the fruit to shine through while still bringing a perfect vinegar bite to the dish!
