Peach season is the best! Big, juicy, sweet peaches are so delicious and so versatile! I love cooking with peaches too and you will love this Peach Crumble! This recipe is refined sugar free and actually uses Whole30 compatible ingredients. Perfect for your food freedom! I used Beth Blends Baking Blend but have included ingredients if you don’t have it on hand. I know your family will love this one as much as mine!
INGREDIENTS
6 large peaches, pitted and sliced thin
1/2 lemon, juiced
1 tsp vanilla
1 tsp cinnamon
1/4 cup peach jam, unsweetened
2 tbsp arrowroot powder
TOPPING:
1 cup Beth Blends Bakin Blend
(or 1/2 cup cassava flour, 1/4 cup tapioca flour, 1/4 cup coconut flour & 1/2 tsp baking soda)
1/4 cup ghee, melted, I like Fourth & Heart
1/4 cup dates, pitted & pureed, about 8-10 dates
1 tsp cinnamon
1/2 tsp salt
1/4 cup almond slices, for garnish
1/2 tsp nutmeg, for garnish

DIRECTIONS

Preheat oven to 350 degrees
Combine filling ingredients in bowl & toss well
Pour into 9 X 13 baking dish & press down with spatula
Combine topping ingredients in bowl & mix till crumbly
Pour over filling
Bake 25-30 minutes till top is golden & peaches are fork tender
Sprinkle almonds on top in last 5 minutes & sprinkle with nutmeg
