Fruit Salsas are so summery and so versatile! I love this Pineapple Salsa thats sweet and so delicious on just about anything! Grilled chicken, pork chops, shrimp or even fish tacos! It is not spicy but feel free to add jalapeño if you want the heat. Oh and this salsa would be amazing with cinnamon tortilla chips too!
INGREDIENTS
4 cups pineapple, diced small
(about 1 small whole pineapple)
1/2 cup red onion, diced
1 yellow or orange bell pepper, seeded and diced
1/2 cup fresh cilantro, chopped fine
2 tbsp fresh mint, chopped fine or more to taste
1 tsp coarse salt, kosher or maldon
1/2 tsp black pepper

DIRECTIONS

Combine all ingredients in a bowl
Let stand at least 30 minutes before serving
