Plum Pulled Pork

Time to break out that slow cooker and get ready for the most incredible Plum Pulled Pork! Just a few ingredients and a jar of Mesa de Vida North African recipe starter sauce and you are on your way to the tastiest pulled pork you ever had! This dish is topped with plums sautéed in "buttery" ghee and cinnamon taking it to the next level. This dish is simply amazing!




INGREDIENTS
2-3 lbs pork loin
9 oz Mesa de Vida North African sauce
3 cups chicken bone broth, I like Kettle & Fire
2 lbs baby potatoes, left whole
1 large onion, cut in chunks
6 carrots, cut in 2" pieces
1 tsp salt
1 tsp pepper
6 black plums, pitted & cut into wedges
2 tblsp ghee, I like Fourth & Heart
1 tsp cinnamon
1/8 tsp salt

DIRECTIONS

Place potatoes, carrots and onion in the bottom of your slow cooker
Pat pork dry and season well with salt and pepper
Place pork loin on top of veggies
Pour chicken broth over
Pour North African sauce over pork
Cover and cook on high for 4 hours or low for 6 hours
Meanwhile, sauté plums in ghee, cinnamon & salt about 10 minutes until the start to brown
Remove pork & shred
Return pork to pot & mix with sauce
Serve with plums on top
