I absolutely love cooking with them and this Pork & Peaches dish is sweet and savory and made all in one skillet in 30 minutes so it is just perfect for those busy weeknights too. The pork is tender and the sweet peaches are in a buttery cinnamon and balsamic sauce that will make them swoon!
4 boneless pork chops, I like Greensbury Market
2 tblsp olive oil
1 tsp salt
1 tsp pepper
3 large peaches, sliced in 1/2" wedges
3 tblsp ghee, I like Fourth and Heart
1 tblsp balsamic vinegar, I like Thrive Market
1 tsp cinnamon, I like Primal Palate
1/4 cup almond slivers

Preheat oven to 350 degrees
Heat oil in a large oven proof skillet
Pat chops dry and sprinkle with salt and pepper
Add to pan and cook 4 minutes each side
Move to a plate
Add ghee to pan
Add peaches, cinnamon and balsamic
Stir gently and cook 3 minutes
Add chops back to pan
Bake 10 minutes or until chop temperature reaches 145 on thermometer
Remove from over and spoon peaches and sauce over the chops
Sprinkle with almonds
