Pork & Sweet Potato Chili

Do you love chili all year round? I sure do! This Pork & Sweet Potato Chili is rich and hearty and everything a chili should be! It is loaded with veggies and delicious, good for you bone broth and makes a big batch so there will be plenty of leftovers for lunches during the week.







INGREDIENTS

2 lbs pork loin, cubed in bite size pieces, I like Rastelli's
2 tbsp olive oil
1 cup onion, diced
3 ribs celery, diced
1 green bell pepper, diced
3 cups sweet potatoes, diced small
1 jalapeño, diced, leave seeds if you like more heat
15.5 oz can fire roasted diced tomatoes
12 oz jar salsa of choice
16.9 oz chicken bone broth, I like Kettle & Fire
2 tbsp tomato paste
1 tsp salt
1 tsp garlic powder
1 tbsp cumin
1/2 bunch fresh cilantro, chopped
green onions, limes & avocado slices for garnish, optional

DIRECTIONS

Heat oil

Add onions & celery & cook till onions are translucent

Add bell peppers, stir one minute

Add pork & cook till no longer pink

Add sweet potatoes, diced tomatoes, salsa, tomato paste. broth, jalapeño & spice

Increase heat & bring to a boil

Lower heat & simmer 15 minutes

Add cilantro, stir well

Serve with garnishes
