Sometimes you just want to grab a little treat and with these Protein Carrot & Pecan Bites you can enjoy and know that they are healthy too! These gooey little protein bites taste just like carrot cake and are so delicious! Just a few ingredients and no bake making them the perfect treat to whip up anytime! I like them cold from the refrigerator.
INGREDIENTS
1/3 cup pecan flour
2/3 cup carrots, shredded
1/2 cup nut butter, I like Georgia Grinders, pecan
3 medjool dates
2 scoops protein powder, I like Native Path
1 tsp vanilla
1 tsp cinnamon
1/2 cup shredded coconut, unsweetened

DIRECTIONS

Place all ingredients, except coconut into a food processor and blend till a ball forms
Roll into one inch balls (mix will be wet)
Roll in coconut
Refrigerate for at least 2 hours
