Roasted Tomato Sauce

It's that time of year when the garden is overflowing with beautiful tomatoes and I'm not sorry because this delicious Roasted Tomato Sauce is the best spaghetti sauce! Would you believe me if I told you there is no peeling or seeding involved? Believe it! Creamy, thick and rich sauce without all the work. This sauce also makes the best tomato soup, best base in slow cooker meals and pretty much anywhere you would use sauce! You are going to love it!


4-8 lbs tomatoes, quartered & stems removed
8 cloves garlic, peeled
1 large yellow onion, peeled & cut in 1/8ths
1 tbsp oregano
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
8-10 large fresh basil leaves

Preheat oven to 375 degrees

Line a large rimmed baking sheet with parchment paper

Place tomatoes on pan and spread out

Add onions and garlic

Drizzle with olive oil

Sprinkle with oregano

Roast one hour

Remove and let cool

Move to high speed blender with all the juice

Puree with basil, salt & pepper till creamy

Freezes well in ball jars
