This Sausage Meatball & Potato Soup will warm your soul! So many veggies in this soup to add texture, color and flavor. The little bite sized sausage meatballs are just so fun! Made with bone broth to provide extra nutrients and boost your immunity. The whole family will love this big ole hug in a bowl!
1 lb ground sausage, I like Butcher Box
3 celery ribs, diced
1 onion, diced
4 carrots, sliced
1 1/2 lbs baby red potatoes, cut in half or 1/4rd if large
8 oz mushrooms, sliced
5 oz baby kale
3 cloves garlic, minced
2 tblsp ghee, I like Fourth & Heart
1 can coconut cream
1 quart chicken bone broth, I like Kettle & Fire
1 tsp salt
1 tsp pepper
1 tsp thyme
1/2 tsp rosemary

Melt ghee in a large stock pot.
Add onions and celery and cook till soft.
Add garlic, stir one minute.
Add meatballs and don't touch for 3 minutes.
Flip them over, cover pot and cook 5 minutes.
Add chicken broth, potatoes, mushrooms, carrots and spice.
Bring to a boil, lower heat to simmer and cook 10 minutes or till carrots are tender.
Add coconut cream, stirring well.
Add Kale, stirring till wilted.
