This Sesame Lime Chopped Salad is so fresh and crunchy and I just cant get enough of it! Bursting with flavor and texture this salad has it all. Tossed with the most delicious dressing made with dates, limes, ginger and more. It gets even better after a few days in the refrigerator making it the perfect take along to those weekend barbecues! Enjoy it with teriyaki chicken, shrimp, fish tacos or keep it plant based and dig in with a big spoon!
INGREDIENTS
6 cups green cabbage, chopped fine
4 cups purple cabbage, chopped fine
1 cup carrot stix, chopped
5 green onions, diced
1/2 cup fresh cilantro, chopped
1 cup cashews, rough chopped
1 tblsp sesame seeds, I used a mix of black and white
DRESSING:
2 small limes, juiced
5-7 dates, chopped (7 if small)
1/4 cup sesame oil
1/4 cup rice vinegar
1/2 cup water
1 tblsp fresh ginger, grated
1 clove garlic
1 tsp salt

DIRECTIONS

Combine all salad ingredients in a large bowl
Blend dressing ingredients in a high speed blender till smooth
Pour dressing over salad and toss well
Enjoy!
