We love a cold Shrimp Salad on a hot summers day but honestly this is one we enjoy all year round! It is so simple and yet so full of flavor having the most delicious dressing made with fresh dill and lemon. If you are a shrimp lover you will want to try this one!
INGREDIENTS
1 lb Shrimp, cooked and chopped rough, I like North Coast Seafood
1/2 cup mayonnaise
2 tbslp fresh lemon juice
1 tbslp Dijon mustard
2 tblsp fresh dill, chopped or 2 tsp dried
1/2 cup celery, diced
1/3 cup sweet onion, diced
1 tsp salt
1/2 tsp pepper

DIRECTIONS

Combine in a bowl shrimp, celery and onion. Toss well.
Whisk together in a small bowl, mayonnaise, lemon juice, Dijon, dill, salt and pepper.
Pour over shrimp mixture and toss well.
