Would you believe me if I told you that this Skillet Lasagna is ready in 30 minutes and tastes just like the real deal?! We could hardly believe it ourselves. The flavors are incredible and taste rich and cheesy even though it is dairy free! This is the perfect any day of the week dish when you want dinner on the table quickly! Pair it with a nice salad and you have an amazing meal the family, even the kiddos, will love!
INGREDIENTS
1 lb ground beef, I like Rastelli's
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp basil
8 oz marinara sauce
14 oz can hearts of palm "lasagna", I like Palmini
8 oz dairy free ricotta, I like Kite Hill
2 tbsp nutritional yeast
2-3 tbsp fresh parsley, chopped, for garnish

DIRECTIONS

Heat oil in 12" skillet
Add beef, crumble & cook till no longer pink
Drain any liquid out
Add 1/2 of the marinara sauce
Add spice, stir to combine
Add half of the ricotta, stir well
Layer the "noodles" overlapping if necessary to cover meat sauce completely
In a small bowl add remaining marinara and ricotta, stir
Spread over top of noodles
Cover & simmer 10 minutes on medium low heat
Garnish with fresh parsley, if desired
