Strawberry Apple Avocado Broccoli Salad

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

This Strawberry Apple Avocado Broccoli Salad with Creamy Poppyseed Dressing was the hottest recipe I shared when I did my Whole30 Recipes takeover and everyone that makes it says they have made it over and over and over. Its that good! The best part is you can make it a day ahead of time and have it ready to bring to your backyard barbecue or when going to someone's home. It makes a nice sized bowlful too.




INGREDIENTS

6 cups broccoli, fresh, raw and chopped
1/4 cup red onion, diced
2 apples, diced, I used Pink Lady
2 cups strawberries, chopped
1 large avocado, diced large (save pit)
3/4 cup dried cranberries, unsweetened, I like Patience Fruit Co
1/2 cup raw sunflower seeds
DRESSING:
1/2 cup mayonnaise
1/2 cup non dairy yogurt, unsweetened
1 tbsp fresh lemon juice
1 tbsp apple cider vinegar
4 dates, pitted
1/2 tsp salt
1/2 tsp pepper
1 tbsp poppy seeds

DIRECTIONS

In a large bowl, combine all salad ingredients except avocado

In a blender combine all dressing ingredients, except poppyseeds till creamy

Mix poppyseeds into dressing with a spoon

Mix dressing into salad using a rubber spatula

Add avocado just before serving

*TIP* place avocado pit in salad to keep the avocado from turning color and remove before serving
