Is there anything like a thick and juicy chicken burger thats bursting with flavor? These Sun Dried Tomato Chicken Burgers with Sun Dried Tomato Dipping Sauce will hit the spot every time! They may sound complicated but they are so easy and come together in 30 minutes or less. Whether you grill them or cook them in a pan they are always a hit! I can’t wait for you to try them.
INGREDIENTS
1 lb ground chicken, I like Rastelli's
1/2 cup almond flour
1/2 cup sun dried tomatoes, slivered
1/4 cup onion, minced
1 egg, whisked
2 tbsp fresh basil, chopped or 1 tsp dried
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil, if pan frying
Sun Dried Tomato Dipping Sauce:
1 cup mayonnaise
1/2 cup sun dried tomatoes, not in oil, chopped
2 cloves garlic, peeled
6-8 fresh basil leaves or 1 tsp dried basil
1 tbsp olive oil
1 tsp salt
pinch of cayenne, optional

DIRECTIONS

Mix all burger ingredients in a bowl
Form into 4 patties
Cook on oiled grill or pan 5 minutes per side or till cooked through
For sauce, blend all ingredients in high speed blender till smooth
Refrigerating this sauce will make it set a bit so it is thicker
You can warm it up to serve over grilled chicken before serving.
