Surf & Turf Kabobs

Surf & Turf Kabobs that take only 6-8 minutes on the grill to cook then slathered in the most amazing Garlic & Herb Ghee! Yes please! Lets just say you will need to double this one as David and I ate it all. The shrimp are so tender and sweet and the steak comes out a perfect medium rare. If you like it more well done you can cook the steak on skewers separately from the shrimp and leave them on a bit longer. This is the perfect dish to enjoy all summer long!







INGREDIENTS

1 lb shrimp, tails removed & deveined, I like Rastelli's
1 lb sirloin tips or steak, cubed, I like Rastelli's

2 tbsp olive oil

1 tsp salt

1 tsp pepper

Garlic & Herb Ghee:

1/2 cup ghee, I like Fourth & Heart

1/2 tsp salt

1/2 tsp pepper

3 cloves garlic, minced fine

1 tbsp fresh parsley, chopped

4-6 basil leaves, chopped

1 tbsp fresh oregano, chopped

1 tbsp fresh lemon juice

DIRECTIONS

Melt ghee in small pan

Add garlic & stir one minute & remove from heat

Add remaining Garlic & Herb Ghee ingredients, stir well & set aside

In another bowl add shrimp, steak, olive oil, salt & pepper, mixing well

Skewer shrimp & steak, if using wood skewers soak in water for 30 minutes first

Cook on preheated grill, turning every 2 minutes for a total of 6-8 minutes depending on how you like your steak.

6 minutes will be medium rare

Remove to plate and brush generously with sauce

Save extra sauce for dipping
