Sweet & Sour Pineapple Slaw

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Is there anything better than delicious cold coleslaw in the summer? This Sweet & Sour Pineapple Slaw is full of crunch and flavor and screams summer! We actually eat it all year round. This slaw is perfect on all things grilled and especially delicious on fish tacos! You have to try it!









I.

INGREDIENTS

3 cups green cabbage, chopped fine
3 cups purple cabbage, chopped fine
1 cup carrot sticks, chopped
2 cups pineapple, diced and divided
1/2 cup red onion, diced
1/2 cup dried cranberries, unsweetened
1/2 cup sunflower seeds, roasted and salted
DRESSING:
1 cup pineapple, from above ingredients
1/2 cup mayonnaise
1/4 cup apple cider vinegar
1 tbsp dijon mustard
1 tsp pepper
1 tsp salt only if sunflower seeds are unsalted

DIRECTIONS


Combine all salad ingredients in a large bowl and toss well

In a blender combine dressing ingredients till creamy

Pour over slaw and toss well

Enjoy!
