Turkey & Cauliflower Gnocchi Soup

This recipe is Paleo, Gluten, and Dairy Free.

This Turkey & Cauliflower Gnocchi Soup is a hug in a bowl with it's creamy broth and pillowy soft cauliflower gnocchi! It can also be made with shredded chicken. It's a quick and easy soup that comes together in less than an hour so it's perfect for any night of the week! I will be making this all year long and not just after Thanksgiving! I can’t wait for you to try it.






INGREDIENTS

2 tbsp ghee, I like Fourth & Heart
1/2 cup onion, diced

5 carrots, 2 diced (for mirepoix) & 3 sliced

2 celery ribs, diced

1 tsp salt

1 tsp pepper

1 tsp thyme

1 tsp poultry seasoning, I like The New Primal

2-3 cups turkey or chicken, pre cooked & shredded

6 cups chicken broth, I like Kettle & Fire

14.5 oz coconut cream

2 cups peas, frozen

12 oz cauliflower gnocchi, frozen

DIRECTIONS

Melt the ghee in large pot
Add the onions, celery & diced carrots, cooking till soft
Add spice
Add chicken broth & bring to a boil
Lower heat & immersion blend till veggies are smooth
Add carrots, simmer 10 minutes
Add coconut cream, stirring till combined
Add turkey, gnocchi & peas
Simmer 15 minutes
