This Turmeric Chicken & Cashews is so easy to prepare having minimal cleanup and perfect for any night you want to get something nourishing and healthy on the table that the whole family will love! Loaded with lots of veggies like peppers, mushrooms and onions and some healthy fats from the cashews. It's bursting with flavor!
INGREDIENTS
1 1/2 lbs chicken thighs boneless & skinless, I like Rastelli's
3 bell peppers, cut in chunks
1 large onion, cut in chunks
8 oz mushrooms, cut in 1/4's if large
10 oz Almond Butter Turmeric Dressing, I like Noble Made
1 cup cashews, roasted & salted
1 tsp garlic powder
1 tsp pepper
1 tsp smoked paprika

DIRECTIONS

Place chicken in bowl and pour 1/2 a bottle of dressing over it and marinate for several hours or overnight
Preheat oven to 375˚ and line a rimmed pan with parchment paper
place all the veggies in a bowl & toss with remaining dressing, garlic powder & pepper
Place veggies on pan
Lay chicken pieces on top of veggies
Sprinkle with paprika
Roast 50 minutes
Add cashews to pan & roast 10 minutes more
