Unstuffed Cabbage

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

Who loves stuffed cabbage? Not my husband but he loves this Unstuffed Cabbage in a bowl. We just won’t tell him it's the same thing! This recipe taste just like those delicious little cabbage rolls with so little work! It makes a nice sized batch and there are always leftovers which make a nice cozy lunch for during the week.



INGREDIENTS

8-10 cups Savoy cabbage, chopped
1 lb ground beef, I like Greensbury Market
1 cup onion, diced
3 cloves garlic, minced
14.5 oz diced tomatoes
15 oz tomato sauce
12 oz frozen cauliflower rice
1 tbsp olive oil
1 tbsp tomato paste
1 tbsp balsamic vinegar
1 tsp oregano
1 tsp thyme
1 tsp salt
1/2 tsp pepper
1 tsp smoked paprika

DIRECTIONS

Heat oil in a large sauté pan
Cook beef till browned
Add onions, garlic and spices
Stirring constantly for a few minutes
Add cabbage, tomatoes, sauce & balsamic stirring to combine
Add tomato paste and cauliflower rice, stirring in
Cover and simmer till cabbage begins to soften
Uncover and cook till juice evaporates
