Winter Orzo Minestrone Soup

This recipe is Whole30, Paleo, Gluten, and Dairy Free.

This Winter Orzo Minestrone Soup is every bit a mouthful to say as it is to eat! It's extra hearty and warming with butternut, kale, carrots, celery, orzo pasta all in a rich tomatoey broth. Oh and theres bacon too because everything is better with bacon! Am I right? This makes a huge batch of soup so you will have plenty to freeze for another time.






INGREDIENTS

6-8 slices bacon, cut in 1" pieces
4 carrots, diced
4 ribs celery, diced
1 cup onion, diced
4 cloves garlic, minced
4 cups butternut, cubed small & precooked, I roast it
5 oz baby kale
1 cup orzo, I used cassava pasta
4 cups crushed tomatoes
8 cups beef broth, I like Kettle & Fire
1/4 cup nutritional yeast
1 tsp thyme
2 tsp kosher salt
1 tsp pepper
1 tsp basil
1 tsp oregano
1/4 cup white wine vinegar
2 cups water, if needed to thin soup a bit
fresh parsley, chopped for garnish if desired

DIRECTIONS

Cook bacon in a large pot till crisp & move to paper towel lined plate

Discard all but 2 tbsp bacon fat

Add onions, carrots & celery & cook till onions are translucent

Add garlic, stirring one minute

Add broth & bring to a boil

Add orzo & cook 10 minutes

Add tomatoes, nutritional yeast, spice & vinegar

Simmer 10 minutes

Add butternut & kale, stir till kale wilts

Add bacon

Garnish with fresh parsley if desired
