Instructions
Melt: ghee in a large pan
Add chicken: add chicken, salt and pepper and stir
Brown: Allow chicken to brown for 5 minutes on all sides, move to a plate
Add onions: potatoes and mushrooms to the pan
Cover: and cook until potatoes begin to soften
Return: chicken to pan
Add: olives and Latin Sauce
Simmer: 20 minutes on medium low heat

- 1 cup Onion chopped
- 1 cup Olives mixed green & kalamata
- 10 oz White Mushrooms quartered or sliced
- 1.5 lb Baby Potatoes quartered - see note
- 3 tablespoon Ghee
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Instructions
