Sheet Pan Shrimp Fajitas

Ingredients
- 1 lb Raw Shrimp deveined and tails off, pat dry
- 3 Bell Pepper seeded & sliced thinly
- 1 Onion large, sliced in ¼" wedges
- ¼ cup Avocado Oil plus extra drizzle for shrimp
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fajita Spice
- 2 Limes 1 juiced, 1 cut in wedges for serving
- ¼ cup Cilantro chopped
Instructions
- Preheat oven to 400˚
- Line a rimmed pan with parchment paper
- Spread peppers and onions evenly on pan
- Drizzle with ¼ cup oil
- Sprinkle with salt and pepper
- Squeeze juice from one lime over peppers and onions
- Cook for 15 minutes
- Meanwhile, toss shrimp in fajita spice and drizzle with oil, toss again
- Remove pan from oven and add shrimp to pan
- Cook 15 minutes longer, flipping shrimp halfway through
- Garnish with lime wedges and cilantro
- Enjoy!
