    Turkey Buffalo Burgers with Bleu Cheese

    Whether you grill them or make them on a skillet indoors, one thing is for certain. Everyone will be raving about these juicy, tender and delicious turkey buffalo burgers with bleu cheese. The caramelized onions bring so much flavor. The melted bleu cheese pairs perfectly with the heat from the buffalo sauce. I promise you will be making them again and again!     Who doesn't love a grilled burger? These turkey buffalo burgers with bleu cheese kick it up a notch. The savory flavors from the grilled onions to the tangy kiss from the bleu cheese crumbles and the fiery bite from the buffalo sauce is a match made in heaven. The best part is they are ready from start to table in about 30 minutes! So go ahead and make them during your busy weeknight schedule too.

    Ingredients You Will Need

     Ground turkey: I prefer to use organic ground turkey meat. It provides a healthier and more environmentally- friendly alternative to conventionally raised options. By choosing organic, you are supporting sustainable agriculture practices and improved animal welfare. You also nourish your body with better quality meat. My favorite go to is Grass Roots Coop for their pasture raised meats.

    Almond flour: Almond flour is typically finer and made from blanched almonds. Almond meal is coarser and often includes the almond skins in its preparation. I prefer almond flour for making burgers.

    Onion powder: Adds a sweet and savory flavor to certain dishes that you can’t get from fresh onions.

    Garlic: Fresh is best for obtaining a little stronger touch of garlic flavor. This is stronger than the sweeter touch you would obtain from powder.

    Salt: Elevates the overall flavor of any dish. Always salt in moderation in accordance with your dietary preferences.

    Buffalo sauce: This sauce is enhanced with ingredients to make it richer and smoother than regular hot sauce. Noble Made is hands down my favorite buffalo sauce and it's also dairy-free. I love that it is sugar free, whole30 approved and you get to choose your own heat level.

    Bleu Cheese: Blue cheese is a wide range of cheeses made with the addition of cultures of edible molds. This creates bluish green spots or veins through the cheese. Today the natural mold is refined and used for almost all blue cheeses. I prefer a good Stilton or Roquefort for extra tang and flavor but any blue cheese will do.

    Onion:  I prefer yellow onion for this recipe. It has a bolder flavor than sweet onions but you can certainly use sweet if you like!

    Ghee: Ghee is clarified, which means the impurities have been removed. This results in a pure and clear form of butterfat with lower lactose content than butter.

    Olive oil: Extra virgin olive oil stands out as an excellent choice for sautéing. It adds richness and enhances the natural flavors of foods with its versatility.

    Instructions

    Melt ghee: Melt in a skillet or on the grill. Cook your onions on medium low, until they are browned and soft.

    Prepare the burgers: Meanwhile, combine in a bowl, turkey, almond flour, onion powder, garlic, salt and buffalo sauce, mixing well. Form into four burgers.

    Heat olive oil: Either in a skillet (or on the grill), add burgers and cook 4 minutes per side.

    Dress the burgers: Divide the onions into four equal portions and place on top of burgers. Now add the bleu cheese crumbles to each burger and cover till melted.

    Recipe Tips and Tricks

    Buffalo sauce: You can choose your own heat level with Noble Made buffalo sauce. They have mild, medium or hot. We love medium here!

    Omit the bleu cheese: You can omit the bleu cheese to keep this recipe Paleo and Whole30 friendly.

    Recipe Variations

    Chicken or beef: You can easily swap either ground chicken or ground beef for the ground turkey in this recipe. Either will taste amazing. Adjust cooking time accordingly.

    Feta: If you are not a fan of bleu cheese, you could use feta cheese on these burgers instead.

    Storage Tips

    You can store these turkey buffalo burgers with bleu cheese in the fridge for 4-5 days. Place them in a sealed airtight glass container. I recommend keeping the bleu cheese separate and add to the burgers when you reheat them.

    Why add breadcrumbs to turkey burgers?

    The crumbs will absorb the moisture and will help your burgers maintain their shape on the grill.

    The more you handle ground meat, the tougher and more rubbery it will become.

    Ingredients
      

    • 1 lb Ground turkey
    • ¼ cup Almond flour
    • 1 teaspoon Onion powder
    • 1 clove Garlic minced
    • 1 teaspoon Salt
    • ¼ cup Buffalo sauce
    • ½ cup Bleu Cheese crumbled, I like Stilton (omit for Whole30 and Paleo)
    • 1 Onion large, sliced in ¼"wedges
    • 2 tablespoon Ghee
    • 2 tablespoon Olive oil
